All of the above are matches made in heaven. But one of my most FAVORITE duos is Mint and Chocolate.

Remember my Mint Chocolate Cupcakes? Those were definitely a hit in our house.

In my opinion, it’s the most refreshing flavor combination. It can be enjoyed on a hot summer day, or in the middle of winter. It goes with everything. Flavors that go with everything are ideal.

Brownie points. Or Mint Brownie Points. Mmmm.

When we have family visiting, my baking itch becomes more intense. I just love sharing healthy, natural, and delicious desserts with friends and family because it’s the best way to show them that healthy can ABSOLUTELY be tasty and rich.

This recipe is a winner.

And it doesn’t require an oven. No extra hot kitchen on a hot summer day. Love.

Raw Mint Chocolate Pie (as seen here on Vegweb)

For the crust:
3/4 cup almond flour
1/2 cup packed dates
1/2 cup pecans
1/4 cup cacao powder
2 tablespoons coconut oil
1/2 teaspoon vanilla extract
pinch salt

For the filling:
2 large avocados
1/2 cup melted coconut oil
1/4 cup agave syrup
2 teaspoons mint extract, or to taste (**I would recommend started with 1 tsp and then add based on preference)
1 tablespoon fresh or dried mint leaves
1 teaspoon lemon juice

For the ganache:
1/2 cup cacao powder
1/4 cup agave syrup
2 tablespoons water
2 tablespoons coconut oil
pinch salt

Before it was mint-chocolate pie

Directions:

To make the crust: Put all of the crust ingredients into a food processor and process until well-combined. (FYI - I completely forgot to add the dates and the end result was fine. So you can omit the dates if you choose.) Press the  mixture into the bottom of a round 8 inch pie pan. Place in the refrigerator to chill.

To make the filling: Place all of the filling ingredients into your food processor and process until the mixture is completely smooth.

No problem in the Blendtec!

Pour the mixture on top of the crust and allow it to set in the refrigerator, approximately 45 minutes.

To make the ganache: Combine all of the ingredients into a bowl and mix well.

You WILL lick the spoon a few times...it's inevitable

Once the filling has set, spread the ganache evenly on top.

So close!!

Return it to the refrigerator for at least one hour, or until completely set.

Ta-Da!

The Hubs and I devoured our pieces before pics could capture our love for the pie. But take my word for it – it is AWESOME! No wait. Don’t take my word for it. Try it for yourself.

    Thin Mints were always a favorite girl scout cookie of mine and I also enjoy mint patty ice cream now :)

    I have told you this before I know, but I LOVE MINT CHOCOLATE!!

    I am now craving mint chocolate ice cream at 8 in the morning and wish I had some in the freezer!!

      You can blame me for your mint-chocolate ice cream craving. But what a great craving to have. My fave is the Breyers Mint-Chocolate – I could eat an entire carton which is why I rarely keep it in the house. :) My Mother-In-Law is loving her visit because of all of the desserts I keep making!! :)

      Please do share the recipe!!! I love mint-chocolate ice cream, so I’m always making “healthy” mint chocolate concoctions in the Blendtec to curb my cravings: protein ice cream, smoothies. So I’d love to see your recipe!!

    This is seriously a perfect summer recipe, thank you for an inspiration! I love the combination of ingredients. Mint and chocolate is really a great match. I love apples and cinnamon, that is my staple combo. Also hummus and carrots, carob and raspberries or celery and sunflower seeds butter are my loves :)

      Carob and raspberries would be yummy! Never thought of pairing the two! You would love this recipe!! It was so perfectly minty and so easy to make. The ingredient list/recipe looks long, but it really isn’t. :)

    Don’t do this to me! hahahaha you have so many good recipes I don’t know which one to start with.. I’ve never tried avacado before though is it good in this dish?

      Thanks Alexis!! I absolutely LOVE avocados. The taste and the texture – but in this recipe, the texture is the only thing you notice. Well, the color too obviously because that’s why it’s green. :) But they’re so creamy and make the perfect pie filling. So if you wanted to sort of “test” the texture, you could start with this recipe or one like this. But you could also just slice one up and put it on top of a sandwich or on a salad. I really love them and they’re so good for you! Be sure to post about your first avocado experience!! :)

    that looks amazing! I used to love mint chocolate chip blizzards when I was younger. Not quite the same as the combo of pb and choc for me, but still amazing–and so summery! YUMMMMMM

      Mint Chocolate Blizzards…yum!! My weakness is always the Candy Cane Blizzard. I’ll have to make one of these pies every other day to keep me away from DQ this winter. :)

  • I am SO with you on all of the combos except chocolate and mint! I know I know it’s terrible I just like chocolate on it’s own or with fruit and nuts. I find the mint too distracting. I doo however love that recipe esp the fact that in includes avocado! mmm mmm! :)

      I don’t think we can be friends, Jenny. This whole “not liking mint and chocolate together” thing is just a bit too much for me. ;) Just kidding – I appreciate different tastes! You could always leave out the mint; however, I don’t think it would taste so great as a Chocolate Avocado Pie. :)

  • Um… YUM!!! Love, love, love chocolate and mint (I like chocolate nad peanut butter a little more though). If it wasn’t 10:45 at night I’d be getting things ready to make this NOW!!!!!! :)
